Braised beef, bread and cheese pudding with deep-fried broccoli
Brasied beef is flaked and layered with fried sourdough and cheese to make an oven-baked pudding.

- 2 carrots
- 1 onion
- 2 celery
- 1 small head of garlic
- 3 bay leaves
- 1 sprig of thyme
- 200g/7oz beef dripping
- 8 thick slices sourdough bread
- 3 tbsp Dijon mustard
- 150g/5½oz Cheddar
- and freshly ground saltblack pepper
- , for deep frying vegetable oil
- 8 small heads of purple sprouting broccoli
- 150g/5½oz mayonnaise
- 40g/1½oz creamed horseradish
- 300ml/10fl oz milk
- 200g/7oz plain flour
