Korean barbecue kalbi with ssam jang sauce recipe
This dish is always a serious crowd pleaser. It is best cooked on a charcoal grill but if you don’t have access to one, a grill pan works almost as well.

- 1 Korean short beef ribs, trimmed and cut thinly into ½cm thick slices
- lbs pears (use a semi-hard sweet variety like conference or barlette) OR 1 Asian pear, peeled and grated
- 2 cloves garlic, grated
- 3 dark brown sugar
- 3.5 tablespoons soy sauce
- tbsp roasted sesame oil
- 4 grated ginger
- tbsp grinds of black pepper (adjust to taste)
- 2.5 sea salt
- tbsp spring onion or scallion, finely chopped
- 2 clove garlic, grated
- tsp Korean fermented soy bean pasta (dwengjang)
- 8 roasted sesame seeds
- 1 Korean chilli paste (gochujang)
- pinch mirin
- 1 roasted sesame oil
- 1 bowl cooked medium-grain white rice
- 4.5 green leaf lettuce leaves
- tbsp sesame leaves (optional)
