This dish is always a serious crowd pleaser. It is best cooked on a charcoal grill but if you don’t have access to one, a grill pan works almost as well.

Ингредиенты

  • 1 Korean short beef ribs, trimmed and cut thinly into ½cm thick slices
  • lbs pears (use a semi-hard sweet variety like conference or barlette) OR 1 Asian pear, peeled and grated
  • 2 cloves garlic, grated
  • 3 dark brown sugar
  • 3.5 tablespoons soy sauce
  • tbsp roasted sesame oil
  • 4 grated ginger
  • tbsp grinds of black pepper (adjust to taste)
  • 2.5 sea salt
  • tbsp spring onion or scallion, finely chopped
  • 2 clove garlic, grated
  • tsp Korean fermented soy bean pasta (dwengjang)
  • 8 roasted sesame seeds
  • 1 Korean chilli paste (gochujang)
  • pinch mirin
  • 1 roasted sesame oil
  • 1 bowl cooked medium-grain white rice
  • 4.5 green leaf lettuce leaves
  • tbsp sesame leaves (optional)
