Тройной пирог с говядиной, картофелем и весенней зеленью
Пирог с тестом на говяжьем жире, с тремя слоями начинки: говядина, картофель и весенняя зелень с лимоном.
Ингредиенты
- 1 shin of beef, diced
- kg good pinch of plain flour
- 1 salt and pepper
- 1 knob of butter
- pinch carrot, diced
- 1 stick of celery, diced
- 1 shallots, peeled
- 1 sprigs of rosemary
- 5 sprigs of thyme
- 2 bay leaf
- 2 beef stock
- 1 ale
- 250 medium potatoes, peeled and cut into chunks
- ml turnips, peeled and cut into chunks
- 250 knob of butter
- ml salt and pepper
- 3 pinch of thyme leaves
- 3 plain flour
- 1 beef suet
- 1 good pinch of salt
- pinch cold milk
- 1 knob of butter
- 500 heads of spring greens, shredded
- g lemon, zest only
- 250 salt and pepper
- g egg beaten with a pinch of salt pinch of fresh thyme leaves

Шаг 1
Приготовьте тесто: смешайте муку, говяжий жир, щепотку соли и холодное молоко, замесите тесто. Уберите в холодильник на 30 минут.

Шаг 2
Влейте говяжий бульон и эль. Доведите до кипения, уменьшите огонь и тушите 1–1,5 часа до мягкости говядины.

Шаг 3
Отварите картофель и репу до готовности. Слейте воду, разомните в пюре с кусочком сливочного масла, солью, перцем и щепоткой тимьяна.
